A peachy spin on an Italian classic: Peach Caprese Salad

PEACHES ARE JUST STARTING TO SHOW UP IN THE MARKETS. Sweet, juicy and summery. And that reminded us of a delicious spin we did on the classic caprese salad several summers ago, swapping peaches for tomatoes, and adding mixed greens with a balsamic vinaigrette for more flavor and crunch. You’ll find the recipe and the cookbook that inspired it here.

  1. I remember this delicious recipe and the stunning photograph, Terry. I believe I had recently discovered your blog. This may have been the first recipe of yours that I made.

I fixed it for a family brunch served in three courses instead of our usual buffet style. Your yummy and rather decadent salad, then quiche Lorraine finished with an assortment of mini-coffee cakes and café au laits. Simple but satisfying and more than one person had seconds of your salad. It has become a family favorite.

Thank you for the original recipe post and almost twelve years more of deliciousness.

  2. this sounds just delicious. and as i am not a tomato lover this is perfect for me. now i just have to wait till summer for peach season 🙂
