Potato Salad with Capers, Shallots and Mustard

MEMORIAL DAY WEEKEND IS THE UNOFFICIAL START OF SUMMER. For us, summer is potato salad season, and weekend events conspired to confirm that. First, we were invited to an out-of-town birthday barbecue. Because we were traveling, we didn’t want to do anything mayonnaise based that needed refrigerating. Our Mark Bittman-inspired Potato Salad with Capers, Shallots and Mustard does not.

In fact, you assemble it while the potatoes are still warm. The capers, whole grain mustard and shallots give it a lively, tangy, kind of fancier-than-potato-salad flavor. You’ll find the recipe here.

Marion’s Classic American Potato Salad

It being Memorial Day weekend, we also had a weekend guest. After a day of running around showing off our city, we wanted an easy-to-prepare dinner that welcomed summer. I cooked some salmon and tossed a green salad. Marion made her classic American potato salad, with mayonnaise, yellow mustard and the crunchy bite of red bell peppers.     I just saw that we’re supposed to hit 108° Thursday ~ it is June. I was actually walking around taking my visiting brother places he wanted to see one June when we hit 122°. About 4pm we gave up and hit a Mexican restaurant for margaritas.
