We’re not cooking much this summer—well, not cooking much in the way of new shareable recipes. So I raided the archives to see what we’ve cooked in past Julys. Some good stuff, it turns out.
Grilled Sriracha Apricot Chicken
Summer grilling season calls for lots of chicken—and that can lead to chicken burnout. Here, a basting sauce of Sriracha, apricot preserves, hot chili sauce, rice vinegar and fish sauce gives the grilled chicken shown above a tangy, slightly spicy kick. You’ll find the recipe here.
Cold Cucumber Avocado Soup with Radish Garnish
One of our favorite summer pleasures are chilled soups. Here, Marion combines cucumber, avocado, potato, buttermilk, Greek yogurt, and half and half to create a cool, creamy, tangy, refreshing summer soup.
Moules Marinières (Sailor’s Mussels), Oven-Fried Pommes Frites with Herbes de Provence
Tomorrow is Bastille Day. We’re always happy for any excuse to cook—and eat—French food. Here, mussels steamed in wine, butter, garlic and shallots are paired with pommes frites “fried” in the oven.
Kimchi Potato Salad
Potato salad is a summer default side for good reason, and we’ve made plenty of them here. This one, made with kimchi, bacon and scallions, is one of our absolute favorites.
Peppery Pork Cucumber Stir-fry
When you don’t want to spend much time in the kitchen, Marion’s quick stir fry with ground pork, English cucumber, red bell pepper, scallions, lemongrass and ginger comes together quickly and deliciously.
Spicy Pork Chops with Balsamic Peaches
Peaches are in season, and pork plays so well with fresh fruit, doesn’t it? This sweet, savory, spicy dish takes full advantage of both.
And finally, for those of you who caught the reference in the headline (and especially for those of you who didn’t), here’s the perfect song for a summer with a thousand Julys.
I’ve done a stir-fry with cukes before, but never thought to add meat to it. Love the addition of the pork! So good! That kimchi potato salad looks super, too. The weather really hasn’t make it all that tempting to cook — or even eat — has it? Tough summer this year. 🙁
