EVEN IF YOU DON’T CELEBRATE ST. PATRICK’S DAY, we think you’ll appreciate their way with satisfying, rib-sticking dishes during the vagaries of March weather. Here are three we really like, all featuring potatoes.
Lamb Stew
There are many variations on this quintessential Irish dish. Our version, shown above, turns winter root vegetables—potatoes, turnips, carrots and onions—and lamb and and dark beer into a rich, satisfying meal.
Pork and Potato Cakes
We are big fans of using up leftovers. Here, leftover mashed potatoes combine with ground pork, grated apple, chopped onion and fresh sage for a quick, economical, thoroughly satisfying dinner.
Colcannon
Potatoes, cabbage and leeks were once considered “foods of the common man.” But plenty of butter and cream turn them into a luxuriously creamy traditional Irish favorite, colcannon.
Pork and Potato Cakes? I’d want to eat these throughout the year! Colcannon is another dish that should be eaten throughout the year — best mashed potatoes ever.
