LOOKING FOR WAYS TO MAKE THE MOST OF BOUNTIFUL SUMMER PEACHES? Peach Habanero Tarragon Butter is a sweet, spicy treat, perfect for spreading on toasts with goat cheese, as shown above, livening up a peanut butter sandwich, spooning onto ice cream, stirring into yogurt and more.

What exactly is a fruit butter, though? Well, unlike jellies and jams, fruit butters contain no pectin to thicken them. And unlike preserves, they’re smooth and creamy, not chunky. Essentially, fruit butters are fruit, sugar and any other flavorings you care to add, cooked down and puréed into a spreadable consistency.

For our spicy version, we use a whole habanero pepper, seeds and all. And it has a decent amount of heat. If you wish to err on the side of caution, you can control the heat by removing the seeds and the ribs inside the pepper. That’s where the heat lives. Or maybe remove half the seeds and ribs to dial down the heat. The fresh tarragon adds a touch of anise flavor with, according to The Spruce Eats, “a combination of bitter and sweet, with touches of vanilla, mint, pepper, and eucalyptus…. the French variety is mild, marrying these contrasting flavors together to create an elegant and delicate herb.”
