For Thanksgiving: sweet potatoes times four, hold the marshmallows

SWEET POTATOES ARE A DELICIOUS PART OF THANKSGIVING DINNERS, but too often, marshmallows tag along, creating a gooey, overly sweet concoction that gets a hard pass from us. Here are some ways to turn sweet potatoes into surprising sides that will have your guests asking for seconds. No marshmallows allowed.

Roast them with shallots, herbs and a little cayenne pepper. Dial up the heat and flavor a little more, mashing them with canned chipotle peppers in adobo sauce and topping them with chopped scallions. Liven up a traditional Italian dish by swapping sweet potatoes for regular potatoes to make gnocchi. Or start your Thanksgiving dinner as we always do here at Blue Kitchen, with chilled sweet potato vichyssoise. You’ll find all four recipes right here—and maybe start a new tradition of your own.

Before you go, a quick note. This week marks the 20th anniversary of Blue Kitchen. We’re as surprised as you are to still be here, cooking and sharing new things. Please join us as the adventure continues.
