Apricot jam, balsamic vinegar, garlic and thyme flavor these delicious weeknight-quick pork chops.

I WAS JUST THINKING ABOUT THE EARLY DAYS OF THE PANDEMIC, maybe because we both just got our latest COVID-19 vaccine. We are always grateful when we do, remembering back to the beginnings of the outbreak—pre-vaccines, pre everything—when we wore homemade masks, washed our hands constantly and basically hunkered down. Most of us cooked a lot then too, afraid to go into restaurants, or anywhere really. Looking through our archives, we came across this comforting recipe from that time when comfort was so needed, Apricot Balsamic Pork Chops.
This is one of those simple dishes that comes together reasonably quickly and relies on things you likely already have around the house (or can easily get)—apricot jam, balsamic vinegar, garlic, dried thyme and pork chops. Cooking is nicely straightforward, no kitchen acrobatics after whatever has filled your day. And because pork plays so well with fruit and tanginess, it is delicious in a simple way.
When we first made this, it gave us a sense of cozy self-sufficiency, especially needed back in those days, but always a welcome feeling. We hope you try it. You’ll find the original recipe here. We also really hope you all get your COVID-19 vaccines. And your flu shots. We all need to take care of ourselves and each other.
